The grapes are harvested exclusively in the vineyards surrounding the company and immediately cooled. After about two days at a temperature of five degrees centigrade, the soft pressing takes place and the free-run must is fermented in stainless steel vats at controlled temperatures for about twenty days. A few months' aging on its lees in post fermentation gives importance, structure but above all aromatic complexity.

ORGANOLEPTIC SHEET & PAIRINGS

Straw yellow in color with golden-green reflections. Intense, enveloping and pleasant aroma. Fine, elegant and harmonious. A bouquet of citrus, exotic fruit, white flowers and the classic smell of anise. Minerality and flavor are the masters. Ideal with all types of fish, especially raw fish. Excellent with cheeses.
